Cooking steps

Cut and rinse

Cut potatoes into thin strips, rinse until the water is mostly clear, then drain well.

Heat oil, fry dried chili and garlic briefly until fragrant but not burnt.

Add potatoes and stir-fry over high heat for 1-2 minutes. Season, then add vinegar near the end.
